ISCHIA PER 'AND PALUMMO CRU

Designation of origin

PRODUCTION AREA: The grapes that give life to this Cru are born in S. Angelo in Monte Zunta, in our most prestigious estate, at 450 a.s.l. This vineyard, recovered in 2012, is defined as heroic because it is accessible only on foot through a very tiring path. Here the vines grow in the southernmost point of the island of Ischia and enjoy the view over the beautiful village of Sant’Angelo. The grapes are harvested strictly by hand at the beginning of October at the best degree of sugar and phenolic ripeness

GRAPE VARIETY: 85% Piedirosso 15% Cabernet Sauvignon

TRAINING SYSTEM: Gouyot with planting of 5,000 vines per hectare

VINIFICATION: The grapes are pressed and the must thus obtained is left to macerate and ferment in stainless steel tanks in contact with the skins. During this phase, pumping over is frequent to favor the passage of color and noble tannin from the skins to the fermenting must. After about 20
days the young wine thus obtained is separated from the skins, to continue aging in French oak barriques for 12 months. The refinement then continues in a 400-liter terracotta amphora for another 6 months

COLOR: Intense ruby ​​red with violet reflections

SMELL AND TASTE NOTES: On the nose you can immediately notice balsamic and spicy notes, but also notes of red fruit such as black cherry, currant, cocoa and licorice. On the palate, the structure is important, very well balanced and harmonious. The finish is persistent and spicy.

PAIRING: Served at 16-18 ° C, even better if decanted, it goes well with fatty, grilled or braised meats, game, wild boar and stews. We recommend it in combination with venison fillet with red wine reduction.
